Ingredients for 4 people:

  • 300g red lentils
  • 1 red onion
  • 1 carrot
  • 1 cup Micro Cilantro
  • 70g tomato paste
  • 95g red curry paste
  • 250ml coconut milk
  • ½ lime
  • 900ml vegetable stock

Method:

Cut the red onion into half rings and the carrot into small pieces. Fry the onion, the carrot and the tomato paste until the vegetables are soft (about 3 minutes). Add the red curry paste and fry for 2 more minutes.

Then add the vegetable stock and red lentils. Cook the soup for about 12 minutes. Then add the coconut milk and the juice of half a lime. Next, puree the soup until it is nicely smooth.
